Aulis is Simon's way of inviting you behind the scenes to share insider knowledge about his philosophy, where a deep respect for nature and the wild meets cutting-edge technique, imagination and passion. The space is named Aulis as a tribute to Aulis Lehtimaki, a Finnish chef and artist who was a key team member in the early days at Simon's Michelin-starred restaurant L’Enclume.
